Hey there,
I’ve made the best-baked onion rings EVER! If you have some onions that aren’t going to use, try this recipe.
Tip: Save the small rings in a bag/container for another recipe that uses onions.
2-3 large yellow onions
Onion ring batter:
65g plain white flour, optional gluten-free flour
150ml milk of choice
1 tbsp apple cider vinegar
1 tsp baking powder
1/2 tsp chili powder
1/4 tsp turmeric powder
Pinch of black pepper
Dry ingredients:
100g panko breadcrumbs, divided into 2 bowls
2 tbsp cornmeal
½ tsp chilli powder
1/4 tsp thyme, fresh or dried
1/4 tsp turmeric powder
Pinch of black pepper
Preheat oven to 225C/435F
Slice ends off of each onion (save peels and roots for a veg stock later) and carefully cut 1/2 inch thick rounds.
Whisk wet ingredients into a mixing bowl - making sure that the mixture is a pourable pancake consistency.
Divide the dry ingredients into two separate bowls and keep to the side - this will come in handy when the first bowl of breadcrumbs gets a bit soggy from the batter.
Dip each onion ring in the batter and allow any excess batter to drip off. Place the onion ring now in the breadcrumb mixture and coat well. Place each coated onion ring on the lined baking sheet and bake for 8-10 minutes at 225C.
Serve immediately with a sprinkle of flaky salt and dipping sauce of your choice, perhaps on the side of a spicy bean burger.
