Spaghetti & Meatballs - I love these meatballs!
Now, these meatballs can be served with pasta or in a sandwich. Make a big batch and freeze them for a rainy day. Whatever you do, make these meatballs!

Makes about 20 meatballs
1 onion, diced
3 garlic cloves, minced
400g meatless mince
200g meatless sausage
150g breadcrumbs
1 tbsp tamari or soy sauce
1 tsp dried oregano
1/2 tsp red chilli flakes
Generous pinch of salt
1/4 tsp black pepper
1 tbsp fresh parsley, roughly chopped
Combine everything together. With your hands, roll roughly 20 golfball-sized meatballs.
Warm about 1-2 tbsp oil in a large skillet over medium heat, then add your meatballs. Don’t overcrowd the skillet. Cook for 3 minutes, then rotate occasionally and cook now for another 8-10 minutes.
Quick Tomato Sauce:
400g crushed tomatoes
1-2 garlic cloves
Pinch of salt
Black pepper
Red chilli flakes
Warm the sauce in a small saucepan. Finely grate the garlic, add the seasoning and stir to cook for another 3-5 minutes.

Guardian Taste magazine last week sun-dried tomato meatballs recipe didn't have sun-dried tomatoes in the ingredients list, but even adding some blitzed wasn't enough to bind the mix, so had to add an egg(to a vegan recipe!) Adding grated lemon to garlic bread totally drowned out any other flavour. Think the recipe needed better testing.
